INGREDIENTS (Kickin’ Chipotle Chicken):
-8-10 Chicken Legs, Trimmed
-1/3 Cup Chipotle Chilies, Canned in Adobo Sauce
-3 T Olive Oil
-3 Garlic Cloves, Minced
-1/2 Sweet Onion, Coarsely Chopped
-3 T Fresh Cilantro Leaves, Finely Chopped
-1 T Smoked Paprika
-1 t Ground Cumin
-1 t Chili Powder
-1/2 t Sugar
-Coarse Salt / Cracked Black Peppercorn, to Taste
-1 Wood Plank
METHOD to the MADNESS (Kickin’ Chipotle Chicken):
-In Food Processor, combine Chilies, Olive Oil, & Garlic – Puree until forms Paste.
-Add Onion, Cilantro & Spices to Food Processor – Mix until Onion is FINELY Chopped.
-In shallow Baking Dish place chicken & cover with all but 1/3 Cup Chipotle Sauce.
-Cover dish & refrigerate for 8-12 hours.
-Place remaining 1/3 Cup of Chipotle Sauce in small bowl – cover & refrigerate.
-Pre-Heat Grill to HOT.
-Remove Chicken from Baking Dish & Place on Wood Plank.
-Over Cooler Edge of Medium/HOT Grill, Set the Plank (Loaded with Wings).
-Cover Grill & Cook for 20-30 Minutes, turning Wings over once, at 10-15minutes.
-After 20-25 Minutes Brush Wings with Chipotle Sauce.
-Continue to Grill for additional 5 Minutes over Plank, or until Sauce begins to Caramelize.
-Lightly Brush Chicken one last time with Sauce & Move over HOTTEST Grates of the Grill.
-Grill 2 Minutes per Side, or until Char Marks well-defined.
-Pull from Heat, Plate, & Season Additionally, to Taste
INGREDIENTS (Smoked Cheddar Waffles):
-1 3/4 Cup All-Purpose Flour
-1 Cup Yellow Cornmeal
-2 1/2 Cups Buttermilk
-1 Cup Smoked Cheddar, Finely Shredded
-3 T Unsalted Butter, Room Temperature
-2 T Canola Oil
-1 T Fresh Thyme Leaves, Finely Chopped
-1 t Basil Leaves, Finely Chopped
-1 t Sugar
-1 1/2 t Baking Powder
-1 t Baking Soda
-1/2 t Garlic Powder
-Kosher Salt / Ground Black Peppercorn, to Taste
METHOD to the MADNESS (Smoked Cheddar Waffles):
-Pre-Heat Waffle Iron.
-Thoroughly combine all Dry Ingredients & Spices in a Large Mixing Bowl.
-In separate Mixing Bowl combine Butter Milk, Eggs, Butter, & Oil.
-Gently fold the Wet Ingredients into Dry Ingredients.
-Mix Batter until well-integrated, but slightly lumpy.
-Add 2/3 Cups Grated Cheese to Batter Mixture.
-Pour Batter over Waffle Iron, but BEFORE closing lid, sprinkle Shredded Cheese over Batter.
-Close Lid & Cook until Golden Brown.
-Remove & Repeat until all Batter is used.
*To keep Waffles warm… Place on Baking Sheet in Pre-Heated Oven @ 200-250ºF.
