"Apple & Poblano Roasted Ribs"

TIME: 4 Sunday FUNDAY Wild Blue Brew / COST: Disregarding the Calorie Counter / TASTE: Face-Full of AMAZING Red Meat!!

INGREDIENTS:
-1 Rack o’ Ribs
-2 Cups el Bachelor’s Apple/Poblano Chutney (Chilled)
-3 Tbspns Brown Sugar
-2 Tbspns Butter
-2 Tbsp Cinnamon
-1/2 Lime Squeezed of Juice
-1/4 Cup Apple Cider Vinegar
-Salt/Pepper/Crushed Red Pepper to Taste

METHOD to the MADNESS:
-Preheat oven to 275 Degrees.
-Place Ribs bone-side down in shallow roasting pan lined with Tin Foil.
-Next, massage by hand, Sugar, Cinnamon, Salt/Peppers into both sides of meat.
-Pour Apple Cider Vinegar & Juice from Lime into bottom of Tin Foil.
-Wrap Ribs tightly, sealing ALL edges… ROAST for 2hrs.
-After 2hrs cook time uncovet Tin Foil, revealing top the Rib Rack (MAINTAIN Tin Foil underneath Ribs holding Liquid).
-LIBERALLY apply Apple/Poblano Chutney & Butter across top of the Meat.
-Leave UNCOVERED & Cook for an additional 30-60min, or until the Meat is TENDER (NOT falling off bone… TENDER is objective).
-During the final 30-60min, REGULARLY baste the Ribs w/ the liquid from the pan bottom, keeping the Rib exterior MOIST while the meat finishes cooking & Chutney crusting turns Golden in color.
-Pull Ribs from oven & let rest for 5-10min, allowing the meat to reabsorb the amazing concoction of FLAVORS.
-Grab a plate, LEAVE the Silverware, & get MESSY with this Rack O’ Red Meat!!

INGREDIENTS:
-2 Granny Smith Apples (Chopped & Finely Cubed)
-1 Medium Onion (Chopped & Finley Cubed)
-1-2 Poblano (Depending on HEAT Preference)
-1/2 Bunch Cilantro (Finley Chopped)
-1/4 Cup Cranberry
-1/4 Cup Apple Cider Vinegar
-3 Tbspns Sugar
-1 Lime Squeezed of Juice
-1/2 Lemon Squeezed of Juice
-1 Tspn Cinnamon
-1 Pinch Nutmeg

METHOD to the MADNESS:
-Combine ALL ingredients into a pan over medium heat.
-Cover & allow to simmer, stiring occasionally, until all liquid is absorbed.
-Pull from heat & place in CHILLED area for 10-15min prior to plating or adding to dish for cooking.
