Skinny Greek Yogurt Grape Salad
-4 Cups Red Grapes, Rinsed/Dried/Sliced
-4 Cups Green Grapes, Rinsed/Dried/Sliced
-1 Cup Walnuts, Seasoned/Roasted
-1/3 Cup, Lite Brown Sugar
-6oz Vanilla Greek Yogurt
-3oz Low-Fat Cream Cheese
-2 T Canola Oil
-1 T Vanilla Extract
-1 T Granulated Sugar
-1/2 T Cinnamon
-1/6 t Salt
-1 Pinch Nutmeg
METHOD to the MADNESS:
-Pre-Heat Oven to 350ºF.
-In Mixing Bowl, toss Walnuts, Oil, Granulated Sugar, Cinnamon, & Salt.
-Spread Walnuts in a single layer over a Baking Sheet.
-Place in Oven for 8-10 Minutes, or until Golden Brown, stirring irregularly to ensure even Toasting.
-Note: Walnuts go from Golden Brown to REAL BURNT quickly. Keep close attention around the 10 Minute Mark.
-Remove from Oven from heat & place Roasted Walnuts Large Bowl lined with paper towel.
-Toss nuts gently for a few moments, season additionally (to taste) & allow to cool for 10min.
-In separate Mixing Bowl Combine Yogurt, Cream Cheese, 1/4 Cup Lite Brown Sugar, & Vanilla Extract.
-Add Sliced Grapes to Yogurt Mixture (ensure Grapes have dried).
-Fold in Roasted Walnuts.
-Dust with remaining Brown Sugar & Nutmeg.
