"Pumpkin-Spiced Caramel Corn w/ White Chocolate Glazing"

CARAMEL CORN INGREDIENTS:

-1 Cup Heavy Whipping Cream
-1/2 Cup Granulated White Sugar
-1/3 Cup Roasted Pumpkin Seeds
-1 Tsp Pumpkin Spice
-1 Tsp Vanilla Extract
-1/4 Tsp Cinnamon
-1 Cup Corn Kernels (Pop via oil in covered pan or sub instant popped corn)

METHOD to the MADNESS:
-Begin by pouring Vanilla, Pumpkin Spice, & Cinnamon into Cream. Mix thoroughly & Set aside.
-In medium sauce pan, simmer down sugar, but do NOT stir until sugar begins to melt & turn light golden in color.
-Once sugar begins to carmelize, stir until all sugar melted.
-Remove from Heat & SLOWLY stir in Heavy Cream (Sugar will begin to bubble & Begin to harden).
-Return to heat, stir in the Pumpkin seeds, & simmer/stir consistently until Sugar/Cream mixture is consistently Smooth.
-Remove from Heat, stir in Popped Corn, & mix until ALL Caramel is evenly distributed throughout corn.
-Set aside finished Pumpkin Spiced Caramel Corn to cool. If Humanly possible to not begin consuming immediately… Allow to rest for 10-15min.

-LAST, BUT NOT LEAST… SMASH HANDFULLS of the CORN INTO YOUR FACE!!!!!
