"Skinny Minny Montez Cristo"

TIME: 2 GLASSES OF PINOT NOIR / COST: NOT HAVING A HEART ATTACK / TASTES: FUN DATE NIGHT @ HOME

INGREDIENTS: 
-3 slices 100% Whole Grain Reduced-Calorie Bread
-2 Slices Low-fat Swiss Cheese
-1/4 Lb Black Forest Ham (deli thin sliced)
-1/4 Lb Smoked Turkey Breast (deli thin sliced)
-4 Egg Whites
-2 Tablespoons Skim Milk
-1 tspn Olive Oil
-1 tspn Vanilla Extract
-1 tspn Sugar
-1/4 tspn Nutmeg
-1 Dash Cinnamon
-1 Pinch Salt / Cracked Pepper or to taste

OPTIONAL SIDE INGREDIENTS: -1 Shot glass Blackberries
-1 Shot glass Raspberries
-1 Shot glass Blueberries
-1 Pinch Orange Zest
-1/4 Cup Whole-Grain Spicy Mustard
-1/4 Cup 0-fat Honey Mustard
-1 Dusting of Cinnamon
-1 Pinch of Crushed Red Pepper

METHOD to the MADNESS: -Pre-heat grill to medium heat (~400-450degrees).
-Combine in a medium / large mixing bowl all ingredients, except bread, meat & cheese.
-Wisk by hand for 60-90seconds.
-Once well distributed, liberally soak one piece of bread at a time in the egg mixture. before placing bread into a frying pan, placed over medium heat.
lightly coat the pan w/ a non-stick spray & turn heat to warm (note: objective is to cook each side of bread to a golden crisp, but, do NOT over-cook, as the bread will hit the grill momentarily!!).
-Once all bread has been french cooked in the pan, lay the pieces of bread flat &  stack as follows: Bread, Ham, Turkey, Swiss, Bread, Ham, Turkey, Swiss, & final piece of Bread.
-Once stacked, take sandwich to the GRILL where you will lay flat, unpressed, over the grates for ~60seconds per side (heating only long enough to leave beautiful sear marks & infuse the cheese into the sandwich!!)
-Remove from heat & use razor-sharp knife to slice off the crusted sandwich edges, leaving the interior to then be quartered.
-Finally, plate the dish w/ a shot glass of chilled blackberries, raspberries, whole-grain mustard, & blueberry honey mustard.

el Bachelor’s ORIGINAL, “BLUEBERRY HONEY MUSTARD”: -In a small bowl pour Blueberries & roughly mush.
-Mix in 0-fat Honey Mustard, a dusting of Cinnamon, & pinch of Crushed Red Pepper into the Blueberry mush.
-By hand, thoroughly mix all ingredients together.

PLATING: -For FUN, use shot glasses as serving dishes for fruit & mustards (UNLESS all shot glasses are currently being employed for their orginal intent of containing alcoholic liquid).
-Over the top of each quartered sandwich, lightly dust w/ a miniscule amount of sugar, cinnamon, salt, & orange zest.
-From here, MIX & MATCH each bite… leaving your taste buds w/ 20 different mini-sandwich combinations on a single plate!!

WHY A WINNER: Not only is this dish fun, simple, savory, a touch sweet w/ a bit of heat, healthy, etc., but… its a PERFECT fit for almost any date occassion… brunch, Friday date night, etc. :)

THE COUNT per SERVING: 425calories, 9g fat, 30g carbs, 5g sugars, 49g protein.
