Adult White Truffle Mac & Cheese
-8oz Penne Pasta (or Alternative Pasta of Choice), Dry
-6oz Fontina Cheese, Grated
-6oz White Cheddar Cheese, Grated
-6oz Smoked Gouda Cheese, Grated
-4 Cups Water
-1/4 Cup Parmesan Cheese
-2 Cups Half&Half
-3 T Butter, Room Temperature
-2 T All-Purpose Flour
-2 T White Truffle Oil
-Coarse Salt & Ground Black Peppercorn, to Taste
METHOD to the MADNESS:
-Pre-Heat Oven to 500ºF & Grease/Apply Non-Stick Spray to Baking Dish.
-Over High Heat, bring Water + 1 t Truffle Oil + Pinch of Salt to Boil.
-Reduce Water to simmer, Add Pasta, cover & cook till al Dente.
-Drain Pasta, Rinse, & Set aside.
-In Large Sauce Pan over Medium Heat, melt Butter.
-Whisk Flour into Melted Butter & continue stirring until mixture is thick/pasty.
-While continuing to cook, Whisk in Half&Half until Mixture is Smooth.
-Using a Wooden Spoon, Fold in Cheeses, remaining Truffle Oil, & Salt/Pepper, to Taste.
-Spread Pasta evenly across Baking dish, pouring Cheese Mixture over top.
-Stir Pasta & Cheese, evenly coating Pasta throughout Baking Dish.
-Place uncovered in Oven for 5-7Minutes, or until light, golden Cheesy Crust forms atop the Dish.
-Pull from Oven, allow to cool for 3-5 Minutes, Plate&Serve!
