WILD Mushroom Soup
-3 Tbsp Butter
-2 Large Shallots (diced)
-1/2 Lb Mixed Wild Mushrooms
-1 Tbsp Choppped Fresh Thyme
-3 Tbsps Flour
-7 Cups Low-Sodium Chicken Broth
-3/4 Cup Heavy Cream
-2 Tspns Salt
-1/8 Tspn Black Pepper
METHOD to the MADNESS:
-Melt butter in large lidded pot over medium heat.
-Add shallots and saute for 2-3 minutes.
-Add mushrooms and thyme and cook 8 minutes.
-Sprinkle in flour and cook 2 minutes stirring constantly.
-Add stock and bring to a boil.
-Turn down to a simmer, cover and cook 15 minutes.
-Stir in heavy cream, salt and pepper and bring to simmer (do not boil).
-Remove from Heat, allow to rest for 2-3min, & Serve.
