Ingredients

Pork

  • 4-6 bone pork roast cut into 4-6 chops or whatever thickness you prefer
  • 2 tbsp fine sea salt
  • 2 tbsp cracked black pepper
  • 2 tbsp smoked paprika
  • 1 tsp grapeseed oil per chop

Honey Garlic Glaze

  • ¼ cup honey
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp grated fresh ginger
  • 5 garlic cloves finely grated

Garnish

  • Fresh chives
  • Parsley
  • Extra Honey Garlic Glaze

Instructions

  • Start by getting the grill up to 375 F and with indirect heat, meaning only one side with hot coals and the other with nothing. While the grill is coming to temperature, use this time to prep all the other ingredients that you are serving with the pork. For the Pork Chops, I like to slice out roughly 1” thick chops, as they cook well and stay juicy! Once the chops are cut, slather the pork with the oil and rub in all the spices. Set aside and let the meat sweat with it.
  • While waiting for the chops to go on, place all the glaze ingredients into a small cast iron pan and mix well. Place the cast iron onto the heat and let it come to a simmer so that it begins to thicken up.
  • Once you are about 20 min from dinner time, get the pork on the grill! Place chops on the heated side of the grill and don’t touch it for 2-3 minutes. We want to build up the grill marks and char on it. Rotate the pork chops 90 degrees and allow to cook again for another 2-3 minutes. Then, flip and let them sit on the heat for roughly 5 minutes. Once that time is up, take the pork chop and, holding by the bone, dip into the gaze or baste it with a brush. Set the chops over on the indirect heat side and allow the glaze to set. Feel free to glaze the pork a couple time to build up the flavors and sticky goodness!
  • Check the internal temperature of the pork, which should be roughly at 140-145 F. When you get to this temperature, remove the pork from the grill and allow to rest for 4-5 minutes on a rimmed cutting board. Slice and serve!
