- 1/2 tspn chili oil
- 1/2 tspn toasted sesame oil
- 1-2 pinches red chili flake
- Kosher salt and black peppercorn to taste
Fire up your grill or smoker for indirect cooking. Target temp is 275F add your wings to the indirect side of pit or "sweet spot" of your smoker. Then, roll smoke over the wings for 1.5 hours. At this time you should have a gorgeous mahogany color.
Start basting wings with your sauce every 15 mins until Internal temp of wings is at 185-200F. Remove wings and rest for 5-7minutes, then devour!
Go easy on sesame oil as it can overpower the sauce if too much is added. Start with a small amount and add a small at a time, to your liking.
