Ingredients

  • SPRING SALAD INGREDIENTS:
  • 10 cups spring lettuce mix
  • 1 cup fresh basil leaves
  • 1 pint blueberries
  • 1 cup roasted walnuts salted
  • 3/4 cup dried cherries
  • 1/2 cup celery finely chopped
  • 1/3 cup carrots finely grated
  • 1/3 cup Parmesan cheese shaved
  • 2 tablespoons chives finely chopped
  • GRILLED CHICKEN INGREDIENTS:
  • 16 ounces chicken breast
  • 2 tablespoons canola oil
  • 2 tablespoons fresh thyme leaves
  • 2-3 cloves garlic minced
  • 1 pinch cayenne pepper
  • kosher salt and fresh ground peppercorn to taste
  • GRILLED ROASTED SWEET POTATO INGREDIENTS:
  • 2 medium sweet potatoes rinsed, peeled and 1/2" cubed
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar
  • 1/2 teaspoon nutmeg
  • kosher salt and fresh ground peppercorn to taste
  • LEMON VINAIGRETTE INGREDIENTS:
  • 3 tablespoons olive oil
  • 1 lemon juice plus zest
  • 1/2 teaspoon sugar
  • 1 pinch salt

Instructions

  • Rub chicken breasts with canola oil, garlic, thyme, cayenne pepper, salt & pepper.
  • Place chicken in resealable container & marinate in refrigerator for 1 hour.
  • Preheat oven to 350F & grill to medium-high.
  • In small mixing bowl toss sweet potatoes, cinnamon, sugar, nutmeg, 2 tablespoons olive oil, & salt/pepper, to taste.
  • On a lined baking sheet, in a single layer, spread seasoned sweet potatoes.
  • Place in oven for 20-25 minutes, turning potatoes after 15minutes, baking until tender with slightly crisp exterior.
  • Pull from Heat & set aside to cool.
  • While Sweet Potatoes baking, on a separate lined baking sheet, in a single layer, spread walnuts, dry roasting in oven for 8-10 minutes, or until golden brown.
  • Pull from heat & set aside to cool.
  • Meanwhile, pull chicken from refrigerator, season with salt/pepper, to taste, & lay over center-most grates of grill.
  • Grill chicken breast for 3-4 minutes on first side, or until charred crust formed.
  • Flip chicken breast & grill additional 5-6 minutes, or until cooked through & juices run clear.
  • Pull chicken from heat, set aside for 3-5 minutes under tented tin foil.
  • Meanwhile, in a large mixing bowl, combine spring lettuce & basil, tossing to coat with Lemon Vinaigrette.
  • Then toss in blueberries, carrots, celery, cherries, chives, Parmesan, & walnuts.
  • Plate into 4 portions, adding sliced chicken breast & roasted sweet potatoes, seasoning additionally, to taste.

Ingredients

  • 32 oz Omaha Steaks Boneless Chicken Breast cut in 1" cubes & ground
  • 1/2 red onion finely chopped
  • 1/2 cup celery finely chopped
  • 1/2 cup carrot finely chopped
  • 1 teaspoon granulated garlic powder
  • 2 egg whites
  • 1 1/4 cups bread crumbs
  • 1/4 cup A Bachelor & His Grill's "Sweet & Spicy Buffalo Sauce" (recipe below)
  • 1 tablespoon olive oil
  • 8 oz blue cheese cheese
  • Kosher salt and fresh ground pepper to taste
  • Sweet & Spicy Buffalo Sauce
  • 1 1/4 cups Frank's Red Hot Sauce
  • 3 tablespoons unsalted butter room temperature
  • 1 teaspoon honey
  • Garnish
  • Green onion finely chopped
  • Optional A Bachelor & His Grill's, "Cool & Creamy Blue Cheese Dip"
  • Optional A Bachelor & His Grill's, "Avocado-Greek Yogurt Dip"

Instructions

  • Pre-heat oven to 400○F.
  • Slice chicken breast into 1" cubes, toss in food processor & pulse until ground. Set aside.
  • In heavy bottom sauce pan over medium heat, stir together butter, hot sauce & honey. After 3-5 minutes, turn heat to lowest setting & cover.
  • In large bowl hand mix ground chicken, prepared onion, celery & carrot, garlic powder, egg whites, bread crumbs & 1/4 cup buffalo sauce.
  • Divide meat mixture into 32 equal parts by separating in half, then each half in 1/4, then again in 1/4. Roll each into a small ball.
  • In center of each ball stuff ~1/2oz blue cheese & reform ball sealing cheese.
  • In large skillet over medium heat bring to simmer 2 tablespoons oil & lay down stuffed meatballs, searing exterior for 3-5 minutes, or until just golden brown.
  • Remove from skillet & set balls over a non-stick cooling rack. Place cooling rack over a lined baking sheet, then bake for 15-20 minutes, or until internal temp reached 160○F.
  • Remove meatballs from oven & rest for 2-3 minutes before gently setting in pan with simmering buffalo sauce - spooning sauce to coat meatballs.
  • Cover pan & simmer on low heat, basting intermittently with sauce, until prepared to serve.
  • Season to taste, pin each ball with toothpicks, garnish with green onion, & serve.

Living near the shores of the Great Lakes there is no time I enjoy more than opening weekend of Farmer’s Markets in the small lakeside towns from South Haven to Grand Haven, on north to Traverse City & Petosky.

A Bachelor & His Grill‘s “Fresh Ginger-Honey Strawberries” was inspired by these Markets… incorporating Fresh Michigan Berries, local Wild Honey infused with Ginger Root, & accompanied by gorgeous leaves of Basil & Mint.  Lite.  Crisp.  Simple.  Sweet.  Fresh.  Incredibly Delicious.  And… an ideal way to wind down a romantic Mid-Summer evening, as the Sun comes to rest over the Great Lake.  Enjoy.

Ingredients

  • 2 Pounds Fresh Strawberries rinsed
  • 1 Cup Honey
  • 1 Ounce Ginger Root finely grated
  • 1 Orange Zest finely zested
  • 1 Lemon Zest finely zested
  • Fresh Ground Cinnamon & Sugar dusting over strawberries
  • Leaves Basil & Mint to garnish

Instructions

  • In Microwave-Safe Bowl combine Honey, Ginger, & Zests.
  • Heat in Microwave for 2 minutes total, in 30 second increments, stirring in between Cooking.
  • Remove from Microwave & pour Honey into air-tight container.
  • Refrigerate for 24hours, removing within 1hour of preparing Strawberries.
  • Rinse & pat dry Fresh Strawberries.
  • Drizzle Strawberries with Ginger-Honey & Dust with Cinnamon.
  • Garnish with Mint Leaves & Serve.

Ingredients

  • 3-4 large sweet potatoes
  • 2-3 tablespoons canola oil
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cayenne powder
  • 1 teaspoon granulated garlic powder
  • Coarse salt & ground black peppercorn to taste

Instructions

  • Preheat oven to 400 & grill to HOT.
  • Bake whole potato on oven rack for 10-15 minutes.
  • Pull potato from oven & cut potatoes length-wise in 1/8s.
  • In medium bowl toss potato fries with oil & seasonings, until coated liberally.
  • Lay slices of sweet potato over direct, high heat.
  • Grill each side for 3-4 Minutes, or until Char marks well defined, basting intermittently with additional oil.
  • Pull from grill & rest for 3-5 minutes on wire cooling rack. Plate. Season additionally to taste. Devour.

  • 1/3 Cup Honey
  • 3 Tablespoons Low-Sodium Soy SauceStatus
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon water
  • 1 teaspoon Canola Oil
  • 1 Pinch Ground Ginger

Instructions

  • In Small Mixing Bowl, Whisk all Ingredients.
  • In Sauce Pan over Medium Heat, bring Soy/Honey Sauce to a simmer.
  • Reduce until syrup-like in consistency.
  • Remove from Heat, allow to cool for 2 minutes, & drizzle over Sweet Potatoes.

Ingredients

  • 2 Large Hass Avocados
  • 1 Cup Greek Yogurt Plain
  • 1/4 Cup Fresh Cilantro Leaves Chopped
  • 2 Cloves Garlic
  • 1/2 Lime Juiced
  • 1 Tablespoon Jalapeno Pepper Finely Chopped
  • 1/2 Tablespoon Smoked Paprika
  • 1/2 Tablespoon Ground Cumin
  • 1 teaspoon Olive Oil
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Cayenne
  • Kosher Salt & Fresh Ground Black Peppercorn to Taste

Instructions

  • Place all Ingredients in Food Processor.
  • Pulse to combine, then Blend on low/medium speed for 30-45 seconds.
  • Fold mixture back upon itself with Spatula, return to Blend on medium speed until Creamy & Smooth in Consistency.
  • Season additionally, to Taste.
  • Scrape Dip into Serving Dish & Plate with Pita, Tortilla Chips, Vegetables... OR serve as a Spread on Sandwiches, Burgers, etc.

Homemade Baked Spicy Tortilla Chips

  • 10-12 Medium Whole-Grain Tortilla Shells
  • 2-3 Tablespoons Olive Oil
  • 1 teaspoon Chili Powder
  • Coarse Salt & Fresh Ground Black Peppercorn, to Taste
Instructions
  1. Pre-Heat Oven to 350F.
  2. In small bowl, mix Olive Oil, Chili Powder, & Salt/Pepper.
  3. Brush both Sides of all Tortillas with Olive Oil Mixture.
  4. Stack Tortillas & Cut into 6-8 Triangles, Rectangles, Octagons, etc.
  5. In single layer over lined Baking Sheet, lay cut Tortillas.
  6. Bake for 12-15 minutes, or until Golden Brown & Crispy, flipping once at 7-9 minutes.
  7. Pull from Oven & place over Cooling Rack for 2-3 minutes.
  8. Season additionally, to taste, & Serve Warm.
