Jamaican-inspired barbecued heirloom chicken!! Locally-harvested winged beasts beer-brined overnight, spatchcocked, and injected with a roasted garlic compound butter. Rested until arrived at room temperature, then seasoned with kosher salt, plenty of black pepper and a jerk-style dry rub. Slowly smoked over a smoldering pit of hickory wood to juicy, tender perfection. Caramelized in the final minutes of cooking with layer upon sweet and tangy layer of a mahogany-colored habanero barbecue sauce. Carved into quarters, served family-style atop a bed of homemade lime and mint-infused rice and a freshly-prepared pineapple salsa al fresco, then all washed down with an ice cold handful of RedbStripe Ale. Taking me back to some of my very favorite nights, devouring the live fire street fare of Kingston and the culinary heart of the Caribbean. So amazing!! -Cheers, David

Laying wood to everything but the kitchen sink!! This bad to the bone table breaker was loaded with an entire rack of @CertifiedPiedmontese beef short ribs, seasoned boldly in an activated charcoal-roasted garlic dry rub, then prepared slowly over the essence of oak and hickory wood to tender, bite from the bone perfection. Paired with a succulent Nashville-inspired smoked half chicken, artisan brisket sausages, parsley-pine nut pesto potato salad, homemade macaroni and cheese, cherry kale slaw, pickled cucumbers and onions. And, a massive chocolate Oreo cupcake... because... you know, why not??! And, bet this - we smashed everything but the butcher paper on this platter!! -Cheers my friends, David

Slaying a pile of U6 Black Tiger Prawns over white hot cast iron, a smoldering pit of lump charcoal embers and smoky essence of oak and hickory woods. These chili-garlic prawn over creamy white wine parmesan linguini were so dang good!! Check out the full recipe below!! -Cheers, David

Live Fire Chili-Roasted Garlic Prawn:
2 pounds U6-8 prawn, shell removed and deveined
1 tbspn rendered panchetta fat
A bunch of thyme sprigs
1 tspn minced roasted garlic
1/2 tspn red chili flake
Juice of 1/2 a lemon
Fresh parsley, roughly chopped
Kosher salt and coarsley ground pepper

Over blazing hot cast iron infuse thyme into bacon fat for 2-3 minutes. Remove sprigs and toss in prawn. Spoon in garlic and dust with chili flake. Add a squeeze of lemon and session simply. Finish with fresh herbs and prepare until just translucent and cooked through. Remove from heat and set aside.

Parmesan White Wine Sauce (prepared in same pan as prawn):
Splash of olive oil
Knob of unsalted butter
4-6 cloves of minced roasted garlic
1/2 cup white wine
1/3 cup heavy cream
1 cup whole milk
Fresh parsley, roughly chopped
1/2 cup grated parmesan, plus additional to garnish
Crispy chopped panchetta
Lemon zest, to garnish
Salted and roasted walnuts, to garnish
Kosher salt and finely ground pepper
Spinach-chive linguini

Sauté garlic in oil and butter until just golden and fragrant. Deglaze with wine, scraping up an the browned bits. Slowly whisk in cream and milk. Add parsley and parmesan, stir intermittently and reduce liquid until creamy. Fold in linguini prepared to al dente. Load up with prawn and panchetta, then season additionally to taste. Garnish with lemon zest, toasted walnuts, and a splash of olive oil. Serve family style!!

Heritage Turkey Holiday Rub:
2 tbspns paprika
1 tbspns roasted granulated garlic
1 tspn onion powder
1 tspns ground ginger
1 tspn ground nutmeg
1 tspn ground allspice
1 tspn ground toasted cinnamon
1⁄2 teaspoon ground cloves
2 tbspns brown sugar
1 tbspn granulated honey
2 pinches cayenne
Kosher salt and black peppercorn, to taste

These 15 pound, pasture-raised birds were brined in a simple solution of kosher salt and granulated sugar for 36 hrs, then rinsed in cold water, patted dry with paper towel, and placed in the refrigerator, uncovered, for 24 hrs, extracting maximum moisture from the skin. 2 hours before cooking, the bird was removed from its chilling chamber and injected with a 4:1 ratio of chicken stock and olive oil, plus 2-3 finely ground tbspns of the Holiday Rub. The winged beast was then brushed in olive oil and seasoned beautifully with the Holiday Rub, layering flavor on the inside and out. The turkey was perched atop a cooling rack and rimmed baking sheet filled with a mirepoix of chopped onion, carrots, fingerling potatoes, wild mushrooms and chicken stock, then loaded into the @WeberGrills EX6 SmokeFire at 275F. Over the next 4.5hrs the turkey was bathed in the essence of smoky hardwoods, then intermittently basted in duck fat until the turkey thigh reads 145F internal. To finish, the grill was turned up to 375F until internal temps read 160F in thick of the thigh and the skin turns crispy and mahogany-like in color. Once removed from the heat, this feast rested for 30 minutes before presentation and carving. Paired alongside golden cornbread stuffing, a buttery parsnip puree and a mixed salad of freshly-harvested winter greens, this turkey was so tender, so juicy and flavorful, but even better was enjoying this meal amongst the fellowship of those we love the most!! -Cheers, David

Throwing down dozens of beer brined grilled chicken wiinngggzzz with caramelized white barbecue sauce!!

These bad boys were loaded in the kamado atop a pile of lump charcoal embers and smoldering hunks of oak wood. Seasoned boldly with a homemade chipotle dry rub, charred over direct heat and basted in layer upon layer of a tangy white barbecue sauce. This incredible Virginia-style sauce was whipped together with Duke's mayo, apple cider vinegar and lemon juice, chipotle pepper, smoked paprika, toasted cumin, buttery roasted garlic, brown sugar, minced summer shallots, dried parsley and Mexican oregano. Prepared to perfection, then dressed in an aged blue cheese crumble, garnished with tangerine zest, and served alongside an ice cold craft brewed six of Bell's Porter Ale!! -Cheers and have an awesome Sunday my friends, David

So dang epic!! Laying live fire and cast iron to this pile of smoked sausage breakfast dogs. These bad boys were grilled until plump and tender, then stuffed into a buttery, toasted brioche bun, and loaded up with a sautéed diced potato hash of crispy pancetta, caramelized onion, roasted garlic and bell pepper, then topped with fried quail eggs, and finished with fresh green onion and a splash of spicy sriracha sauce. So bleeping good and the perfect breakfast mashup to kickstart the weekend!! -Cheers, David
