Freshly-harvested whole lobsters, Kauai prawns, Carolina low country crawfish, roasted minced garlic, browned butter, lemon zest, a splash of sriracha, and a chef's blend of toasted spices and an aromatic garden of herbs. Pasture-raised and grassfed rack of Australian lam

Pasture-raised and grassfed rack of Australian lamb seasoned with an aromatic blend of roasted garlic, dried onion, basil, rosemary, sage and thyme. Seared beautifully then removed from heat and rested until lowered to room temperature. Brushed in whole grain mustard and rolled into a homemade dry-roasted pecan and toasted pine nut crust. Gently loaded into my Twin Eagles Pellet Grill fueled with oak and cherrywood at 250F. Slowly prepared until an internal temperature of 115F. Rested for 10 minutes, carved into chops and plated family-style over a buttery aged parmesan risotto. Garnished with a splash of Spanish olive oil and freshly-harvested snippets of purple basil, kale florets and fresh thyme from our garden. Life doesn't get much better than this. Incredible farm to fire fall feast!!

These richly-marbled hunks of Australian pasture-raised filet mignon were seasoned boldly with coarskey ground kosher salt, peppercorn and roasted granulated garlic, then rolled around the edges in a blend of activated charcoal rub, dried oregano, parsley and thyme. Seared beautifully at 725F inside my @TwinEaglesGrills 304 chef-grade stainless steel pellet grill fueled by @Kingsford charcoal and pellets. Prepared to medium-rare perfection, carved across the grain into tender medallions and plated atop a creamy wild asparagus and sauteed mushroom parmesan risotto. To plate, the steak and risotto were garnished with lemon zest, purple basil and lemon thyme from our garden, toasted pine nuts, shaved aged Asiago cheese, and a splash of balsamic reduction.

This dish was served alongside a caramelized wildflower honey tart cherry and rock fruit salad. This medly of freshly harvested fruits were smoked over oak wood, then tossed with crisp seasonal greens, toasted pecans and pine nuts, shaved parmesan and a tangy cherry vinaigrette. So sweet, savory, fragrant end refreshing!

As if that wasn't enough, we finished this fiesta with a plate of applewood-smoked apple crisp-stuffed apples with vanilla bean ice cream and homemade caramel sauce!! Granny smith apples cored and loaded to the brim with the most decadent homemade filling, slowly baked in my Twin Eagles pellet grill at 350F until the apples are plump and just fork-tender. Plated warm and topped with ice cream, a drizzle of caramel, salted pecans, and leaves of chocolate mint from our garden.

An awesome afternoon cooking out and watching the grass grow with a couple ice cold handcrafted adult beverages in hand. The perfect fall afternoon in rustic and wild Michigan!! -Cheers and long live the adventure, -David

Throwing down some of the finest all-American tri-tip beef on God's Green Earth!! Seasoned with roasted dried garlic and onion, kosher salt, black peppercorn and a pinch of brown sugar. Slowly smoked then reverse-seared to medium-rare perfection in the traditional Santa Maria-style over live fire and a smoldering bed of lump charcoal and oak wood embers inside the @HoorayGrillCo fueled by @CowboyCharcoal and @WesternBBQWood. Live Fire Lobster Paella!! Inspired by my travels in Spain and the traditional paellas of Valencia, this surf and turf paella is prepared in cast iron over live fire with a short grain arborio rice, caramelized onion and roasted garlic, a homemade savory chicken stock infused with saffron, spicy cheshire pork chorizo, a bounty of low country crawfish, breathtaking Kauai Prawn and lobster tails freshly-harvested from the icy depths of the North Atlantic Ocean, all finished with an aromatic garden of seasonal herbs and a splash of Spanush extra virgin olive oil.
