Rosemary-encrusted dry-aged and slowly smoked prim

Rosemary-encrusted dry-aged and slowly smoked prime rib roast!! Rubbed in an earthy blend of fresh herbs, roasted garlic, dried onion and black peppercorn. Tied down with butcher's twine. Prepared to mouthwatering, medium-rare perfection while bathed in the essence of hickory and oak wood inside my @TwinEaglesGrills Pellet Grill. This glorious hunk of All-American beef was started at 225F of indirect heat for an hour, then removed from the grill for 15 minutes to rest. Placed back in the grill at 450F and basted intermittently with a rosé of browned butter and beef fat until 120F internal temp. Rested for 30 minutes, carved into gargantuan steaks, then served alongside several glasses of ice cold and golden adult beverages. Cheers, my friends!! -David

Freshly-harvested Northern Michigan Whitetail Deer!! Frenched backstrap chops seasoned with a fragrant blend of ancho chili, coffee and cocoa powder, brown sugar, an aromatic garden of dried herbs, kosher salt, black and cayenne pepper. Seared over smoldering inferno of lump charcoal and live fire, then moved to 225F of indirect heat and slowly brought to tender, mid-rare perfection while caramelizing in a beautiful Moroccan date honey - all inside my bad to the bone, fire-breathing All-american @TwinEaglesGrills Pellet Smoker!! Massive Dry-aged Porterhouse Steaks!! Seasoned in an earthy blend of dried porcini mushroom, roasted garlic, dried herbs, red and black pepper, brown sugar and kosher salt. Smoked over oak and hickory wood until 110F internal temp, then seared 2-3 minutes per side and brown butter-basted to tender, medium-rare perfection. So entirely incredible. 4 porterhouse steaks
1 cup browned butter
1/4 cup dried porcini mushrooms

1 teaspoon dried parsley flakes
1/2 teaspoon brown sugar
1/2 teaspoon red pepper flakes
2 tablespoons kosher salt and fresh ground peppercorn, or to taste

Check out these monster 2.5 pound barbecued turkey wings!!! These bad boys were beer-brined overnight then seasoned boldly in a chipotle chili, granulated honey, dried herb and roasted garlic rub. The turkey is gonna char five minutes a side over a smoldering double stack of charcoal embers and the essence of applewood. Then slowly finished alongside indirect heat while I baste layer upon caramelized layer of a buttery homemade chipotle honey hot sauce. Paired with a tangy kale slaw, a tall pour of locally crafted stout, and all served next to the bonfire on a crisp evening here in pure Michigan. -Cheers my friend, David
