Smoked Apricot-Glazed Chicken Wings

Equipment

  • Cherry Wood (any fruit wood works)
  • Charcoal of your choice
  • Pit or Smoker

Ingredients

  • 24 wings trimmed how you like
  • Avocado oil or grapeseed oil
  • Your favorite sweet barbecue rub homemade or store-bought

Apricot Wing Glaze

  • 12 oz apricot preserves
  • 1 tspn chili garlic sauce
  • 1/2 tspn chili oil
  • 1/2 tspn toasted sesame oil
  • 1-2 pinches red chili flake
  • Kosher salt and black peppercorn to taste

Instructions

  • Fire up your grill or smoker for indirect cooking. Target temp is 275F add your wings to the indirect side of pit or "sweet spot" of your smoker. Then, roll smoke over the wings for 1.5 hours. At this time you should have a gorgeous mahogany color.
  • Start basting wings with your sauce every 15 mins until Internal temp of wings is at 185-200F. Remove wings and rest for 5-7minutes, then devour!

Apricot Wing Glaze

  • Add all ingredients to a sauce pot over medium low heat and bring to a low simmer for 3-5 minutes to allow all ingredients to infuse. Strain sauce into bowl to remove any chucks of preserves. Finally, add a pinch of red chili flake for desired amount of heat.

Notes

Go easy on sesame oil as it can overpower the sauce if too much is added. Start with a small amount and add a small at a time, to your liking.
